🥑 Nuggets of Nourishment: Vegan Pinakbet
I’m always excited to come across a vegan version of a traditional Filipino dish I grew up eating. This recipe is by Food Today, Food Tomorrow, whose IG bio states “We build collective power and grow agroecological food gardens with the urban poor.”
As a pescatarian who is lactose intolerant, a lot of cultural dishes my mom made are things I don’t eat anymore. However, as I shifted my diet, my knowledge of the expansiveness of Philippine dishes grew, especially when I visited the country earlier this year. I learned about the abundance of seafood and vegetable based meals, and how healthy and easy it actually is to swap in substitute ingredients or simply remove something to accommodate certain dietary needs. It’s also been a deepening of my cultural identity to get to experiment with traditional dishes I was never taught how to make, and creating it for me (vegan kare kare is a thing, and is so frickin’ good).
